Banana Bread Recipe: The Perfect Snack for Busy Days
Let me take you back to 2020, those long pandemic days when all we seemed to do was bake banana bread. Remember when we were all home, trying new recipes, and the smell of banana bread filled our kitchens? It became such a comforting and nostalgic treat. Now, with kids back to school and life getting busy again, having quick snacks is more important than ever. Recently, my family has been obsessed with banana bread! I love it because it’s so simple to make, and you can have a delicious loaf ready in just 1 hour. It’s the perfect go-to snack for those busy school days.
Easy Quick Banana Bread
Ingredients
- 3 Ripe bananas the riper the better
- 1/2 cup yoghurt plain
- 1/2 cup sugar optional
- 1 egg
- 1 tsp Baking soda
- A pinch salt
- 1 1/2 cup all-purpose flour
Instructions
- Preheat your oven to (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper for easy removal.
- Mash the bananas in a large bowl. The riper they are, the easier they’ll mash! You can use a fork or a potato masher.
- Add the melted butter to the mashed bananas and stir until combined.
- Mix in the sugar, beaten egg, and yogurt . You’ll want everything well combined and smooth.
- Sprinkle in the baking soda and salt, then stir it into the banana mixture.
- Fold in the flour gently. Make sure everything is mixed, but don’t overdo it! Overmixing can make the bread dense instead of fluffy.
- Pour the batter into your prepared loaf pan and spread it evenly.
- Bake for 55-60 minutes
- Let the banana bread cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
Notes
- Use overripe bananas: The more brown spots they have, the sweeter and more flavorful your bread will be.
- Use high quality vanilla yogurt: use high quality yogurt it really increases the quality of the loaf. The taste is phenomenal
